Fabulous Flounder and Mashed Potatoes

It's been a long time! I'm excited to share with you tonight's supper! The recipe actually comes from a dear friend of mine who is no longer alive - but I remember vividly standing in her kitchen as she showed me how to make this dish, from start to finish.The flounder recipe originated in China but I can't remember what she called it, so I'll make up a name ..... "Fabulous Flounder". To accompany it, I made mashed potatoes, and I'll include the recipe for that as well. Please feel free to comment/ask questions. I love feedback.


 Fabulous Flounder

Ingredients:
3-4 pcs of flounder (if you can't get flounder easily, tilapia works as well)
cornstarch
salt/pepper
butter and olive oil
fresh garlic
1 bunch scallions
ground ginger
san-j tamari sauce

Directions:
 -chop/dice scallions and 2 segments of garlic
-lightly season the flounder with salt and pepper, sprinkle corn starch on both sides
-heat 2 T butter and 1 T olive oil in a large frying pan
-when hot, pan fry the flounder, 3 minutes on each side
-when you are done frying, set flounder aside
-with oil still hot, place garlic and scallions into frying pan
-sprinkle 1 t. ground ginger, and a generous swig of tamari sauce
-saute for about 5 minutes, a delicious aroma will fill your kitchen
-serve each piece of flounder with a generous spoonful of this mixture on top

Mashed Potatoes

Ingredients:
4-5 russet potatoes
1 T butter
salt
milk

Directions:
-peel, cube potatoes and place into a sauce pan, cover with water
-turn on high and let them boil!
-once they are soft (you can tell by poking them with a fork), drain the water and mash with fork
-add butter, salt and milk to taste
-enjoy, they should be super creamy!
